"ONE ULTREÏA" IS AN EXLUSIVE CAVIAR
It comes from a rare and unknown sturgeon, the Acipenser Naccari, whose origins is Adriatic sea. This fish demands requirement in its living conditions and cannot be fished younger than 12 to 14 years ( 5 for the Baeri and 18 for the Beluga).
Its eggs are small and its color goes to pearl to dark grey. It develops unknown flavors, a subtle and refined taste. Its mouthfell is unique and becomes exceptional after maturation. It has the perfect balance.

THE WILD NATURE
The quality and the taste of the caviar depends of three elements : the water purity, the living conditions and the quality of its food.
The farm raises the sturgeons in the strictest rules of aquaculture and respect for nature.
The breeder has a unique "savoir-faire" of 20 years in sturgeon farms, in France but not only, he is also a member of the Federation of European Aquaculture.
He chose to acquire this farm in 2013 for the purity of its water. The water flow is 5 m3 / second, the biggest European debit.
All the food is organic just as a part of the production. The fish lives in living, fresh, pure and crystal clear water : the natural river water.
