Ultreïa comes from a very rare sturgeon, the Acipenser Naccarii. Only two farms in the world raise this species that originates from the Adriatic Sea. You have to wait between 12 and 14 years before first fishing.
Its eggs are soft with creamy texture. Its aroma strongly increases with time and have an unrivalled long finish. This caviar balance is close to perfection.
